We are both huge Avocado fans. Guacamole, Smoothies, Salads – we tried it all. When we visited the Laura’s Deli during our last trip to Düsseldorf, we experienced Avocado in a completely new way: as a sweet and savory Cheesecake.
It did not take us a week to try re-creating it at home. This avocado cheesecake won’t even have you very busy as it is a no-bake-cake. It will not only impress your guests (I mean, who doesn’t like cheesecake?) but you won’t even have to feel too guilty thanks to its reasonable calorie count. Well… it is still a cheesecake but there are worse desserts.
This amazing dessert combines the sweet flavors of the cheescake with the acidity of the lime and the incomparable flavor of avocados. Requiring zero baking and with a reasonable calorie count, this might become your new favorite dessert!
- 400 g Cream cheese
- 200 ml Whipping cream for mixing with Avocado
- 150 ml Whipping cream for mixing with Gelatine
- 3 Avocaods
- 1 cup White sugar
- 6 leaves of Gelatine
- 1 cup Full wheat cookies
- 100 g butter
- 4 Limes
Zest 3 limes and press them. Keep one aside for decoration
Ground the whole wheat cookies. Melt the butter and mix it with the grounded bisquits. Press the mixture in a springform and put it in the freezer to chill.
Follow the instructions on the Gelatine packaging. Stir the Gelatine (as soon as its prepared) with the cream (which serves as the liquid) bring it to simmer for 2-3 minutes.
Put the diced Avocado, cream cheese, brown sugar and 200 ml of Whipping cream in a food processor. Add the lime juice and zest and mix until the mass is creamy and well united.
Take out your prepared cake ground from the freezer. It should be hard by now. Pour your cheesecake mixture on it and flatten it. Put it back in the freezer for at least 1-2 hours.
If you are ready to serve cut around the springform with a warm knife. Like this you should be able to put the cheesecake on a cake stand of your choice.
Slice your resting lime to decorate the cake. Some lime zests will bring the little final touch.
